When can you drop 的 from 我的手机?

我的手机 is textbook standard; 我手机 is fine in casual speech for personal things.

Textbooks drill 我的手机, but real life often drops 的 when the thing feels personal or close. You hear 我妈妈, 我手机, 我学校, and nobody blinks. If you are contrasting or writing formally, keep 的, as in 这是我的手机, not yours. Dropping 的 in that contrast sounds broken.
Situation / PatternFormulaNaturalAvoid
Textbook or formal我的 + thing我的手机我手机 (in writing)
Casual personal thing我 + thing我手机没电了我的手机没电了 (slightly wordy but fine)
Emphatic contrast这 + 是 + 我的 + thing这是我的手机这是我手机
Close family我 + person我妈妈我的妈妈 (often sounds distant or contrastive)

How is 我买的书 different from 我买书?

我买的书 means 'the book I bought'; 我买书 means 'I buy books'.

的 acts like a zip tie that ties the action 我买 to the thing 书. The whole chunk 我买的书 then works like one noun. Without 的, 我买书 is a full sentence about a habit or general action. If you want to point at a specific book, use 的. If you are just saying you buy books, skip 的.
Situation / PatternFormulaNaturalAvoid
Specific book[Who + action] + 的 + thing我买的书在桌子上我买书在桌子上
General habitWho + action + thing我买书我买的书 (if you mean a habit)
Describing a person[Who + action] + 的 + person我认识的朋友我认识朋友

Why do Chinese speakers say 好的 instead of just 好?

好的 is a soft 'okay'; 好 alone can sound blunt or like a grade.

好 by itself means good or okay, and it is not wrong. But 好的 adds a friendly, agreeing tone that makes you sound smoother. Think of 好的 as 'the good one' turning into 'sounds good' or 'okay'. When you reply to a boss or a delivery driver, 好的 sounds better than a clipped 好. In casual texts, 好 is fine.
Situation / PatternFormulaNaturalAvoid
Agreeing to a request好的好的,我马上到好,我马上到 (can sound clipped)
Answering a factual question好好,我知道了好的,我知道了 (slightly softer, not wrong)
Describing quality好这个菜很好这个菜很好的
Texting a close friend好好好的 (slightly formal)
