Why can't you say 很生病 for 'very sick'?
You can't say 很生病; 'very sick' is 病得很重.
生病 already has 病 inside it, so 很 can't sit in front. To say someone is very sick, put 很 after 病: 病得很重. If you just mean 'sick,' say 生病了 or 病了.

What's the difference between 生病 and 有病?
生病 means getting sick; 有病 means already sick or, as an insult, crazy.
生病 focuses on catching an illness, so it often comes with 了. 有病 describes having an illness or condition already, and it can sound harsh. Call someone 有病 and you're basically saying they're crazy.

Why does 生病看医生 have no subject or 'if'?
Chinese can drop 'when/if' and the subject: 生病看医生 just means 'if sick, see a doctor'.
Chinese does not need a subject in every sentence when context makes it obvious.
