认识 means you personally know someone; 知道 means you know information about them.
Use 认识 when you have met someone or recognize something through direct contact. Use 知道 when you have a fact in your head. 我认识他 means you are personally acquainted with him. 我知道他的名字 only means his name is information you happen to have. Knowing facts about a celebrity is not the same as 认识 that celebrity.

With 了, 认识 often marks a change from strangers to acquaintances. 我认识了一个新朋友 means you just got to know a new friend. Without 了, 我认识他 describes an ongoing state: you already know him. Why do Chinese speakers use 见 for the first meeting, but 认识 for the relationship after it?
见 is the act of meeting; 认识 is the relationship you have after meeting.
Use 见 for the event of meeting someone. Use 认识 for the state of knowing them. 我昨天见他了 tells what happened yesterday. 我认识他 tells your current relationship. If you say 我昨天认识他, it sounds like you are talking about a state, so the time word feels off. Say 我昨天认识了一个新朋友 if you mean you just got to know someone.
